If you’re a chocolate lover like me then this Brookie (brownie stuffed cookie) recipe is for you! All the brownie goodness stuffed inside some melty chocolate chip cookies - yum! These are a little different than traditional brookies as they are cookie shaped and the doughs are kept separate. These turned out even better than I had hoped and I hope your family loves them as much as mine did!
Creative cookies are one of my favorite things to bake. We actually had chocolate stuffed cookies at our wedding (along with some other desserts) and I wouldn't have it any other way.
Ingredients
These brookies are filled with gooey homemade brownie dough surrounded by melty chocolate chip cookies.
For the chocolate chip cookie dough you will need:
- chocolate chips
- salted butter (softened)
- white sugar
- brown sugar
- vanilla
- eggs
- flour
- baking soda
For the brownie batter you will need:
- vegetable oil
- sugar
- egg
- vanilla
- cocoa powder
- flour

Brookie Instructions
Brookies are not difficult to make but they do take a bit more time than regular chocolate chip cookies since you are making two separate bowls of batter then shaping them together to form brookie cookies.
- Step 1: First make your chocolate chip cookie dough. Cream together your sugars and softened butter in a bowl then add the vanilla and eggs. Once fully combined, add flour, baking soda and salt. Beat for 2-3 minutes then fold in chocolate chips. Refrigerate cookie dough while you make the brownie batter.
- Step 2: To make the brownie batter, mix egg, oil, and vanilla in a bowl until combined. Stir in sugar then flour and cocoa powder. Refrigerate until ready to bake.
- Step 3: To form your stuffed cookies, flatten about ¼ cup of chocolate chip cookie dough in your palm then roll a ½ inch ball of brownie dough to put in the center. Fold your cookie dough around the brownie ball and pinch to cover the chocolate brownie mixture.
- Step 4: Bake your brookies. Once your brownie stuffed cookie balls are formed, space them 3 inches apart on a parchment paper lined cookie sheet. Bake at 350 degrees for 13-15 minutes then leave on pan an additional 2 minutes after baking before transferring to a cooling rack.

- Gluten Free Brookies- use gluten free flour for both the cookie dough and brownie batter.
- Dairy Free Brookies - use allergen friendly chocolate chips and vegan butter
- Vegan Brookies - follow the dairy free instructions AND use ¼ cup applesauce or a flax seed egg instead of the eggs in each recipe
Equipment
My favorite stand mixer is a must when making cookies, especially if you are making double batches (as you should). These baking sheets are also perfect for evenly baking your cookies (or brookies).
Storage
These cookies will stay fresh if kept covered for up to 7 days or you can freeze them in an airtight container for up to 3 months.
Top Tip
Try not to overcook these brookies so they keep the gooey brownie texture on the inside.
