I used this hand pie crust recipe most recently for my pumpkin pasties and they turned out delicious. My son had a Harry Potter themed party and it was the perfect dessert.
Pie crust is understandably most popular during the holiday season but hand pies are delicious year round and are a great dessert to bring to any dinner party.

Ingredients
Make sure you use cold butter and cold cream for this recipe. If the crust is too warm then it won't bake properly and could fall apart.

- Flour
- Sugar
- Baking Powder
- Salt
- Egg

How to Make Hand Pie Crust
Hand pie crust is actually super quick and easy to make. Plus it can be much cheaper than buying premade crust at the store. Not to mention it is fresher and often tastier when made at home.
- Step 1: Mix together flour, sugar, baking powder, and salt in a stand mixer. Cut the butter in until pea sized clumps of butter are formed. Slowly add the heavy cream while mixing until dough sticks together but isn't too runny. Shape into a ball and refrigerate for an hour if too soft.
- Step 2: Prepare your filling. Whether it's pumpkin pasties, cherry pie filling, stewed apples, or meat mince. We used pumpkin to make our Harry Potter pumpkin pasties and they were delicious.
- Step 3: Roll out your hand pie crust to ¼' thickness with a floured rolling pin. Use a oval or round cookie cutter to cut circles in your dough.
- Step 4: Use 2-4 tablespoons of filling per hand pie (depending on size). Make a quick egg wash (1 egg plus 1 tablespoon of water). Use egg wash around edges to seal hand pies closed and also on top of them before baking.
I like to crimp the edges of my hand pies with a fork and make knife markings as shown for aesthetics.
Hint: Using egg wash around the edges before crimping with a fork also keeps your hand pies closed while baking and can stop the filling from oozing out.
Substitutions
Using dairy free butter might change the consistency of the pie crust but the filling can easily be adjusted for different diets.
- Gluten Free - Use gluten free flour in your crust recipe
- Vegan - use ¼ cup of apple sauce in place of the egg, use diary free butter substitute and oat or almond milk instead of cream
Equipment

Storage
Store the hand pie crust dough in the fridge for up to 3 days before baking.
Top Tip
Bake your hand pies until just golden brown to get a soft but holdable consistency.

- ⅔ cup cold heavy cream
- 3 cups flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 egg
- 1 tablespoon water
Instructions
- Mix together flour, sugar, baking powder, and salt in a stand mixer.
- Cut the butter in until pea sized clumps of butter are formed.
- Slowly add the heavy cream while mixing until dough sticks together but isn't too runny.
- Shape into a ball and refrigerate for an hour if too soft.
- Roll out to ¼" thickness then cut to desired shape and size with cookie cutter or knife.
- Add 2-4 tablespoons of desired filling to the center of each hand pie.
- Whisk egg and water together to make your egg wash.
- Use your egg wash around the edges of each pie then fold over and crimp shut with a fork. Add design with holes on top if desired.
- Use a pastry brush to apply egg wash to coat top of each hand pie.
- Bake at 375 degrees for 20 minutes until golden brown.
